docs: filesystems: convert ecryptfs.txt to ReST
- Add a SPDX header; - Add a document title; - use :field: markup; - Some whitespace fixes and new line breaks; - Mark literal blocks as such; - Add table markups; - Add it to filesystems/index.rst.
